Three colours in my cake.
They are red, yellow, and green.
Yea, i didnt make a real rainbow. Lol.
but lets call it rainbow.
Here's the simple recipe:
Ingredients:
- 250 gr butter
- 250 gr sugar
- 6 eggs
- 250 gr plain flour, sifted
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- Blueberry jam
Food colouring:
- Red
- Yellow
- Green
Buttercream frosting:
- 100 gr butter
- 150 gr sugar
- 2 tbsp blueberry jam
- 2 tsp vanilla extract
Method:
- Preheat oven to 180°C or 160°C, Brush 3 9-inchi-round cake pans with butter.
- In a large bowl, whisk together flour and baking powder, set aside. In the bowl of an electric mixer, cream together butter and sugar.Slowly add eggs and mix until well combined. Add vanilla and mix until fully incorporated. Add flour mixture and mix until well combined.
- Divide batter evenly between three medium bowls. Add enough of each color of food coloring to each bowl, whisking, until desired shade is reached. Transfer each color to an individual cake pan. Transfer to oven and bake for 20 minutes or until centre of cakes bounce back after being touched lightly.
- Remove cakes from oven and transfer to a wire rack, let cool for 10 minutes.
- To assemble, Place the green layer on the cake plate. Spread a scant blueberry jam filling over the first layer with a small offset spatula so it extends just beyond edges. Repeat process with yellow, and red layers.
- With an electric mixer, beat the butter until it is pale and fluffy. Gradually beat in the vanilla, blueberry jam and sugar. Mix until combined.
- Using an offset spatula, cover the whole cake with Icing.
